Meat processing machine

Seydelmann Cutter cuiseur sous vide KR504

The Seydelmann K504 vacuum cutter cooker combines chopping, mixing, emulsifying, and cooking in a 500-liter tank. It is particularly suitable for manufacturers of processed meats, ready meals, meat products, fish, and plant-based alternatives. In this way, a single machine can perform multiple processing steps while minimizing product transfers.

The K504 processes both fresh and pre-cut, frozen or cooked meat equally well. Furthermore, Seydelmann also provides for its use with fish, vegetables, plant proteins, fruits, and other food preparations. Its operating range extends from -12°C to +85°C.

Vacuum chopping and emulsifying

The vacuum function removes air during the chopping process. Consequently, it enables a finer and more compact emulsion to be obtained. Seydelmann indicates a volume reduction related to air of between 5 and 7%. Moreover, vacuum processing promotes protein extraction as well as the binding of water and fats.

This technology particularly meets the needs of the industrial processed meat industry. It is suitable, for example, for cooked sausages, dry sausages, meat emulsions, and preparations that require a uniform texture. The K504 is also recognized on the market as an industrial vacuum cutter and 500-liter cooker.

Cooking and chopping in a single machine

The cooking system heats the tank with hot steam injected underneath it. As a result, the product can be chopped and heated during the same process. This combination reduces production steps and can therefore shorten the processing time.

The Seydelmann K504 is therefore suitable for recipes that require fine grinding, thorough mixing, and controlled temperature increase. Furthermore, the large tank capacity meets the needs of industrial batch production.

Control and integration into production

The Auto-Command 1000 system features a 21.5-inch color screen. It allows you to monitor technical parameters and store 30 programs, each including up to 10 steps. In this way, the operator can more easily reproduce the settings for different recipes.

Finally, the cutter can be equipped with loading and unloading equipment to facilitate product handling. Its construction, which is almost entirely made of stainless steel, also simplifies cleaning. The Seydelmann K504 is therefore a complete solution for industrial companies looking for a large-capacity vacuum cutter cooker.
